I mentioned in my last post the Eat From the Pantry Challenge. I’m not officially “in”, but I want to do something similar. So I guess I should have some goals or something. It’s just two of us in the house, but we only want to eat out once a week and I take my lunch to work every day and sometimes Hubadub comes home for lunch. I eat breakfast at home every day…Hubadub not so much. This means we keep more food in the house than one would expect two people to have. (An aside: Hubadub used to be 150 pounds heavier and I’m vegan…honestly, I think he and I have psychological food-is-love issues…or something. We really do obsess quite a bit over our meals and what we eat.)
I don’t really have any goals right now other than to go as long as possible between grocery trips and keep up with how much I spend in January and then maybe continue the challenge thru February (when I might be able to say something like “don’t spend more than $X.)
This morning I made a list of dishes I could make just with what I have in the house. The freezer is stuffed with frozen veggies that can be steamed to add to a meal.

- Apple Strudel Quinoa
- Peanut Butter and Facon Pitas
- Homefries
- Pancakes
Lunch/Dinner
- Couscous with Tomatoes (Note to self: write up and share this recipe, too)
- Carrabba’s Tagliarini Picchi Pacchiu Knock off
- Baked Bean Pasta Bake
- Soups (canned and frozen)
- Aloo Palak
- Black Beans and Rice
- Black Eyed Peas and Tomatoes
- “Chik’n” and rice soup
- Boca Chik patties
- Manwiches
(FYI: one of my January Goals is to phase out meat analogs and processed foods.)
I wonder how long I can go before I have to break down and go to the grocery store. I kind of wonder if the ladies who began the challenge have pets. With four cats, I feel like I’m always having to run out for food or kitty litter.
I’m not sure how I missed that you had this whole other vegan blog, but I am soooo excited to read it! I’m not vegan, but I am a vegetarian who contemplates becoming vegan often…but I’m just too damn lazy.
Pumpkin Pie Oatmeal sounds scrumptious and I look forward to the recipe!
I am the laziest person on the planet and I still manage to be vegan :-p I’ll try and get the pumpkin pie oatmeal recipe up this weekend.
