Apple Strudel Quinoa December 26, 2009

(I refuse to call this a recipe. I made it up in my kitchen Christmas Eve)

Yum!

Raisins and Apples and Nuts, Oh my!

Ingredients

1/3 cup Quinoa Flakes

1 cup water

1 apple, chopped (I used a golden delicious)

handful of pecans

handful of raisins

brown sugar to your taste (I used a tablespoon. I’ve got a sweet tooth.)

a generous dose of cinnamon

Bring water to a boil. Throw in the apple, raisins and quinoa flakes. Cook for about 3 minutes or until desired consistency. Stir often. Remove from heat and stir in the nuts, brown sugar and cinnamon. Enjoy.

This made two servings for me (the second day was even better), but I don’t eat huge breakfasts. According to the box of quinoa flakes, the amounts given are for one serving.
